How can I preserve yellow squash?
My squash patch is produucing like crazy and I need to start putting it away.
Any advice?
I have found many ways to do so on the web but would like some opinions on what seems to work best for y'all.

1. I make squash pickles using a bread & butter pickle recipe.
Also make relish using a recipe for cucumber relish. In times of desperation, I've often put grated zucchini in freezer bags to add to soups, etc. If the squashes get too big before I get to them, I throw them over the fence for the deer and bunnies to eat.

2. I've had those and they are really good. A friend has also cut the squash
into spears and used a sweet pickle recipe that turned out really good.

5. Cook a batch of soup with your squash in it and pressure-can it
I could see cooking soup in August with squash, tomatoes, cabbage, cauliflower, and onions. August is when our "harvest" comes in.

6. here's another idea
Mollie Katzen has a terrific recipe for a pizza crust that can be made with zucchini or summer squash. It freezes like a dream. You can put them between waxed paper and have a health pizza crust to pull out of your freezer whenever you need one.

The recipe is in EBF or Moosewood Cookbook.
