I looked it up on the internet and phishing refers to spam e-mails that inexperienced users might click to get to a bogus website that then capture sensitive information.

What I am looking for is slightly different. What is the term when you downloaded malicious code and it picks up catch phrases that you type and sends the info back to some server, which then "customizes" your spam mail?

It's worth noting that Google does almost precisely what you describe by matching up text in your emails and search queries with close matches to their advertisers. I know I've been spooked when my need to know something sick and twisted comes back to me in the form of a Google ad the following day.
