Hit Or Miss?
I had a bowlful of mashed potatoes left over from yesterday. I whipped three eggs, added half a container of cottage cheese, the potatoes and a sliced onion browned in butter. Put it in a buttered casserole and in the oven at 325. I would have added some shredded cheddar and bacon bits but alas I had none.


Will my family love it and declare me the goddess of the kitchen or will they sneer and give me painful looks for serving them left-over mashed potatoes?

3. Ahh if I could only get away with that
Unfortunately, I have enjoyed spoiling them and now must occasionally bear the brunt of their constructive criticism.

BTW: The potatoes went over well. No applause mind you but no big wads in the napkins either. :)

4. Sounds good to me ...
I've done something similar - only instead of cottage cheese, I added some cream cheese as well as some shredded cheddar. I put some French's Fried Onions on top & baked.

IMO, anyone who can turn leftovers into a new experience is a goddess of the kitchen! How'd it turn out?

5. Potato blintzes
Mix chopped scallion, cracked pepper and grated cheddar into the leftover potatoes. Whip up a batch of crepes (it aint rocket science, folks, and you don't need one of those stupid appliances).

Put about 2 tablespoons of potato mix into a crepe, and roll up like a burrito, tucking in the ends as you go.

Melt some butter and a little oil in a frypan and crisp the outside of the blintzes.

Serve with sour cream and chives.

Nobody will have a clue they're eating leftovers, and they'll clamor for you to do this one again and again.

7. Well, now, this sounds so good!
I got 10 pounds of taters on sale the other day. Always a dilema for two people. I was planning on baking the whole lot to keep in the fridge and freezer. but I think I'll whip up a batch and do like you did. That sounds so good and we've got all this rainy weather lately. Makes me want to bake stuff.
