What's for dinner?
I'm sort of on a sandwich kick lately. Burgers, veggie sandwiches, BLT's.

Still cutting back on meat proteins and adding in more veggies and fruit. I'm also still juicing. We are really seeing a lot of improvement from daily juicing.


Tonight's dindin it was a basic hamburger with cheese and lettuce, tomato and onion for me. I also love blue cheese burgers, but I went classic tonight.
I'll juice carrot, apple, ginger, cucumber and cherries when Bill gets in tonight. Yummy stuff.

1. Breakfast today is more interesting than the smoothie I'll be having for dinner.
TOO DAMN HOT for food. 105 now and looking to be over 101 every day for the next week. No rain in sight.

Breakfast is being deciphered. There is a restaurant here in town that serves a vegetarian beet sausage that is SOOO yummy. The foodie friends I was dining with were helping me figure out what was in it. We came up with shredded beets, a bit of egg, maybe some breadcrumbs, spices, I think a bit of onion. not sure I remember the rest. But very good for you and tasty! If anyone has a recipe please post!

Beet sausage sounds verrah interesting.

5. I love beets!
My favorite way to eat them is a salad made of grilled fresh beets, goat cheese and candied walnuts on a bed of fresh greens and dressed simply with a vinagrette.

Yum.

Can't wait to try it, but I would add some sausage seasoning to the beets. Faux meat is all about the seasoning IMHO.

31. Beets are great with citrus
I slice them and serve them with oranges and walnuts with a vinaigrette. It's a beautiful salad. If you are in a hurry and juice...beet/orange/ginger is a terrific combo!

This is basically what I have (this could be like the show Chopped!)

One poached chicken breast
One baking potato
Romaine lettuce
One tomato
Raclette cheese (delicious)
A bit of celery
One red onion
One apple
Two oranges

I do have a fair amount of canned goods, pasta, rice, spices and things like that.

What would you make?

6. I'd probably make a chicken salad
Chop up the chicken breast with the celery, some onion, the apple, and some mayo, and eat it over the lettuce. I'd probably add some curry powder to it, too, and maybe some raisins if I had them. And, I'd probably slice the tomato, and have it on the side with a little salt and pepper, especially if it was the home-grown kind. Maybe I'd have one of the oranges for dessert. I'd save the potato and cheese for another time.

13. LOL, I made a chicken salad last night because I basically had the same ingredients.
Not sure the spouse is going to go for it again, but that may be what he gets!

8. My first though was chicken salad too!
You could also bake the potato and do a chicken and raclette stuffing for it, with fruit/veg coleslaw on the side..?

20. Maybe a saute of onion and apple with whatever seasonings appeal to you that are on hand
Add the chicken to warm through - then make a sauce from the pan drippings and combine. Stuff the pre-baked potato and top with the cheese and broil or bake to melt the cheese and brown lightly?

25. I think I've settled on the sliced potatoes covered with chicken, tomatoes and cheese.
I don't have an adequate broiler, so will probably partially cook the potatoes by boiling, then layer and bake. Think I will throw some onion on there as well, then make a salad with oranges, lettuce and some sliced nuts.

I am already salivating!

28. I used to make something I called Irish Nachos that is basically the same thing
but with mexican seasonings. It was a nice change of pace. Hope yours turned out well!

10. oh this is fun...

let's see.... how about

slice the potato into disks and bake with seasoning
shred the chicken and slice the tomato
layer them on the cooked potato and top with cheese
and broil

make a salad from the fruit and veg...

35. So this is what I did
Sliced potato and some onion. Layered, seasoned with salt, pepper and thyme and baked for about 30 minutes.

Layered shredded chicken, sliced tomato and sliced raclette.

Baked another 15 minutes.

Delicious and no leftovers (now what am I going to do tonight!!)

Mixed Romaine and orange pieces. Dressed with TJ's Pear Gorgonzola Vinagrette. Sprinkled with sliced almonds.

Also delicious.

4. I made a bowl of pasta salad--dinner for the week...
I cooked up some penne and steamed some broccoli. Then I added some peas, black beans and a bit of leftover chickpeas, chopped bell pepper, sliced olives, and so Italian herb and cheese Philly "cooking creme". It's okay. I may have to add some garlic to it. I think I'd rather have blue cheese burgers.

9. I haven't tried the cooking creme yet, but it seems like it could be handy!
I do love pasta salads this time of year. That sounds like a good combo.

I seem to be feeling better with a good solid amount of protein daily, so I am still keeping meat based proteins around for one meal a day.

12. Well lunch was huevos rancheros sans beans or cheese, just
corn tortillas, 2 eggs over easy, and LOTS of chunky salsa fresca. Mmmmmm.

Dinner will likely be crostini with fresh tomato/garlic/parsley chopped stuff (sadly no basil on hand), and maybe with fresh grated parmesan on some other ones. Too hot to cook.

29. Have you ever tried making homemade ginger dressing?
I should look for a recipe.

I love it, but only have it on the rare times I go out to eat. I've been buying fresh ginger to add to my juices...hmm...I should go recipe shop. Ginger dressing might make an interesting sandwich spread....

diced chicken
cashew nuts
sliced scallions
crunchy chow mein noodles

some people put mandarin orange sections in this dish, but I didn't.

I also think it would be good with bean sprouts scattered on top, but I didn't have any.

There are probably a zillion recipes for this salad on the Internet.

33. A nice arugula salad with tomato, artichoke hearts,
onion, goat cheese, and olives. Simple poached salmon and some potatoes. Not sure what I'll do with them, but will probably mash (my favorite).

34. black beans and hominy stew with cornbread
the stew was from yesterday, made a fresh batch of skillet cornbread to go with

black bean stew

1 large (29 oz) can black beans (goya) drained and rinsed
1 large (29 oz) can hominy drained and rinsed
1/2 onion
2 garlic cloves
1 small electric hot red chinese pepper
2 tbs mild salsa
2 tbs tomato paste
bay leaf
cumin
oregano
paprika
a sprig of thyme
water to cover, simmer an hour

cornbread

2 1/4 cups cornmeal
2 cups buttermilk
2 tbs salted butter melted
1/2 tsp salt
1 tsp baking soda
1 tsp baking powder
2 eggs

bake in preheated greased skillet 15 minutes at 450 F

Great combo!

42. It's been very hot and humid here.
I try to stick to cool pasta salads or things I can grill outside on the patio when it's hot. I made a batch of chicken salad last week for wraps that worked out really well. BLTs are great with tomatoes picked fresh from the back yard garden.

This giuten free diet really sucks at times... since I have to get creative... (Well it really does when we rarely go out anymore)

44. Stew beef and cornbread
Not exactly the temps for stew beef, but it was the easiest thing to defrost. Cornbread made savory, i.e. w/o flour and sugar, but with buttermilk. Made both this morning before the mercury started to rise.
