1. Not sure if I'd enjoy that pea soup, may just
taste too much like pureed peas.

One of my favorite cold soups is a Cucumber Soup. Here's the recipe.

Cucumber Soup

Ingredients:

4 green onions, trimmed and chopped
1 garlic clove, pushed through a press
1 medium hothouse cucumber, peeled, seeded and sliced
½ teaspoon dried tarragon
1 can (14 ½ ounces) reduced-sodium chicken broth
1 tablespoon fresh lemon juice
1 cup reduced-fat buttermilk
Salt and pepper
¼ cup chopped fresh parsley
Directions:

In a blender, combine all ingredients except parsley. Purée until smooth. Add salt and pepper to taste.
Chill 1 hour. Garnish with parsley before serving.

4. This one looks very good.
I certainly like the use of all those fresh herbs. I've bookmarked and have added to my "list of recipes to try."

I was hoping this topic would show up here. I love chilled soups in the summer. I usually resort to gazpacho or vichyssoise of some sort, and was hoping for something different.

6. All this talk about cold soups . . .
I was going to make the "Fresh Tomato 'Borscht'" that was highlighted in the NYTimes's link, but after reading the recipe several times, I decided it would be just a glorified tomato juice, so I decided to make my cold cucumber soup. It's a very tasty and easy soup to make.
