A yummy way to get in your broccoli
raw broccoli florets broken up
canned sweet corn
vegetable oil and balsamic vinegar
optional: assorted nuts and/or real bacon bits

mix together and chow. Warning, habit forming.

1. Here's another one:
Chop Brocolli and Cauliflower florettes very fine. (I do it with a little hand chopper thingie-the food processor is a little too fine for my taste) Add a little chopped green onion and mix with Ranch Dressing.

Kids of all ages love this salad---I sometimes add bacon which makes it extra yummy.

2. Broccoli and Avocado Salad
Cut up broccoli into bite size pieces. Steam lightly. Cool.

Peel and dice a ripe avocado. Mix with broccoli.

Make a light vinaigrette, maybe lemon juice and olive oil. Toss.

The textural differences between the broccoli and avocado is really nice. Great summer side dish, yum.
