Favorite spinach recipes?
I have a whole bunch of spinach that needs something done with it tonight.

What are your favorite spinach recipes? I usually saute some garlic in sesame oil and then just cook it down, but I am looking for fresh ideas.

1. I like to melt a bit of butter and stir in about 1T curry powder...
.....in a great big pan, simmer for a minute to let the flavor bloom, and then add an overflowing amount of spinach and a tablespoon of cream. I cook it just until the leaves are barely cooked. Of course it will shrink to nearly nothing. I squeeze a slice of lemon over the top and it's sooooo delicious.

2. A nice simple alternative to my recipe.
I don't have any cream, but I do have some sour cream and half and half.

Do you think either of those could be substituted?

4. half and half would work fine
I've even done it with no cream. It's the low-cal alternative to creamed curried spinach for me.

6. Love it as a salad base and I make Greek pizzas - mucho yummy
I like fresh spinach best, well fresh. But, I do use it on my homemade pizzas - with a brush of olive oil instead of pizza sauce. I add feta, black olives, sauteed mushrooms & fresh garlic with a little 6 cheese Italian shredded cheese on top. Yummy.

7. Too late for dinner, but....
I like it raw in a spinach salad. What goes in it depends on what I have on hand. My favorite is the Greek version with feta cheese, olives, tomatoes, onionst, with vinegar and oil dressing with some oregano in it. And, anchovies if I have them.

8. Coming in late here, but Sicilian Spinach Pie.
My brother's Sicilian in-laws made this a lot.

Pizza style dough, two rounds, one for the bottom of the pie, one for the top. Drizzle with olive oil for the prep.

Layer spinach, sauteed garlic and red pepper flakes, grated cheese(s), a few prosciutto slices.

Seal the dough rounds to make a "pie" and bake till dough is golden brown.

They'd serve it before the main dish, wedges with olives on the side. Simple, but killer.

9. I like it with Italian sausage over pasta or grits...
garlic, onion, cream and mushrooms if you like...just cooked together and used as a topping. Bacon works too!

Spinach and tomatoes over pasta.

Spinach dip - Mmmmmmm!

with a dash of rice vinegar and a little butter. The less it is cooked the sweeter it tastes.

and a spinach mango strawberry chicken salad. :hi: Just cut up all the ingredients, add some red onion, saute some chicken, mix em together and there you are!



Also spinach rolls, a treat we used to get in a great uni restaurant when we were students, and that I have only recently begun to look for a recipe to try myself.

Now bear with me on this one. It's one of those Chinese things that is amazing when it's done.

Remove thick stems, wash and dry spinach leaves. Cut into 1/4" wide strips. Heat oil in a wok until a bread cube sizzles and dump in the spinach. Wait until all the energetic bubbling dies down to slow bubbles and scoop it out onto a paper towel to drain. We're talking seconds, not minutes here.

You will find yourself staring at a black, greasy, sodden mess but just wait a few more seconds. That spinach crisps right up and becomes a great base for stir fries, especially garlicky seafood, and is good crumbled on top of things, too.

I always thought I hated spinach until I tried it this way. There is a moment of sheer panic when you first scoop it out of the hot oil, but the reward is really super.

brown them, add some chopped onion and cook until transparent, add washed spinach and cook until to desired degree of doneness, adding a small amount of water, if necessary. Season with salt & pepper to taste. A lot of greens are cooked this way in the south.

This page has several spinach recipes. I haven't tried them, but some of them sound very interesting.
