Superbowl
We *might* be having one other couple over for the game. Nothing concrete. I hate that, the guys planning a "maybe" get-together.

Anyway, our freezer is full of real food, but I'm having a problem with finger food to make for the game. Here is what I'm thinking with what I have on hand. And I won't be shopping before then. I also have Omaha steaks, etc, but my guys says no - just snacks!

Chicken wings are thawing - no good recipe for them except how we like them - boring - baked with just Nature's Seasonings.

I also have pre-cooked spicy chicken breasts, tortillas, cheese, salsa and was thinking of something this: Quesadilla - http://simplyrecipes.com/recipes/quesadilla/

Chili (make tomorrow) - make my standby or the REAL TX recipe that is so good, I serve it in tortillas?

Limited amount of Tortilla chips, salsa.

Limited amount of crackers, cheese, hard salami.



Any helpful hints would be most welcome. They are both very good cooks, unlike me.

1. Honestly, I think that sound really great as it stands.
The chili and quesadillas would be hearty and still casual at the same time, and whatever sort of fingerfoods that you can put together with the salami, cheese and crackers would be plenty for four IMO.

All I can think to add would be some fruit or sweets.

2. Hmmm....
Deviled eggs? Mini quiches? Mini pizzas? How about a couple of interesting salads that you could put out in single serving sized containers, such as in small plastic cups -- maybe you could do something like a black bean salad to go with the quesadillas, or a pasta salad or an Asian style cold noodle salad? Tuna salad or egg salad on toast points?

3. When I roast a chicken

we only use Nature's Seasonings.. and the wings are always my first choice... mmmmm

and your menu sounds great -especially for just you and a couple of friends!

If I have a get together for just a few, we always have fresh fruit or veggies sliced up for something light to fill up on.

cares about here! Nevertheless I got some spinach and meat pies from the Middle Eastern deli, some hummus, Middle Eastern pastries, etc. I also promised to make brownies. No one here really seems to care about actual dinner! :rofl: I suppose we could make turkey tacos (i don't usually cook beef). I also have lots of ginger ale, orange soda for the teen, some good craft brews and there is more wine here than we know what to do with.


That being said, Go Steelers! :D

Cook something that you and yours will enjoy just in case the guests don't come.

I suppose in keeping with the chicken theme that it might be nice to make some spreadable chicken salad for dipping veggies, crackers or chips in. I just toss cooked chicken (with a little stock) into a food processor and add celery, onion, mayo, a little mustard, spices and maybe some apple or cranberries and nuts to dress it up a little. Friends have enjoyed it at informal gatherings - they like the flavor, texture and being able to dip it.

You could also whip up more of a southwest flavoring in it by adding some chipotle, onion, salsa, cilantro, tomato, etc.

6. Too late for game day, but just wanted to add that a very easy and non-boring
thing to put on chicken wings and other bbq meats is some Mae Ploy - Sweet Chili Sauce 10 Fl. Oz.
It's spicy and sweet, but relatively mild. Hope your Superbowl Party was fun.

8. I prefer that brand but haven't tried but one other. Many grocery stores carry one brand or another
It's great in or on so many things that you might find yourself using it a lot to spice things up.
I don't think I've mentioned it here before so it was probably another fan of the sauce. :hi:

9. Real nachos
Spread tortilla chips, either homemade from old tortillas or from a bag, on a baking sheet. Put a small amount of cheese - Monterey Jack's good but I used cheddar yesterday because that was what I had - on each, then top each one with a slice of pickled jalapeno. You could use fresh jalapeno, but again I usually have a jar of pickled ones in the fridge (Mr. Retrograde likes to make them for some reason). Put in a hot oven for about 5 minutes, or until the cheese melts. It's a lot neater and easier to eat than the pour the jar of cheese sauce on a pile of chips variety, and it looks like you spend a lot of time on it.

I printed and saved all your helpful recipes. And I will use at some point in time. Alas, it was just bar talk for our some-what friend guys.

The other couple never called, never wrote, never came. Two guys on bar-stools "planning" a Superbowl get-together. Typical.

But, I'll be ready next time!
