1. What type of batter were you thinking of?
There are beer batter and tempura batters that would work well for both. Also a normal "chicken fried" sort of batter with egg and flour would be good too.

2. I used the first one at this link just a couple of weeks ago
to do shrimp. I didn't have any paprika, tho. It was pretty tasty. :hi:

3. Thanks to both of you...
I've tried a lot similar to the recipes you posted, but now I'm wondering what's the best thing to fry them in - oil? what kind; Crisco shortening?; olive oil? or a combination of 2 or 3.

If I make a lot I use the deep fryer, for just a pound or so, a frying pan.

Hey hippywife - who let you out of Fiction? I thought we had to stay there or lose our "membership."

4. Tried and true beer batter
Plain flour
Pinch or bicarb
Enough beer to make thick batter. Do not beat until smooth, lumpfree and therefore tough. Just whisk together until a reasonable consistency.

Flour the food, dip in batter and fry hot.
