Sunday Kitchen: I Really Love My Husband Edition.
Wasn't too hectic a Sunday in the kitchen, well not until dinner time. :eyes:

The breakfast for this week, really delicious:

I added mixed jumbo raisins and a wee bit more ginger than called for.

Dinner. What to say about dinner. I love my husband, that's what. He wanted fried chicken, and he doesn't ask for it often. I love fried chicken, too, but I hate to make it. For me it's one huge mess from start to finish. It's really good, but if I didn't love my husband so much, he'd have to be visiting the Colonel or Popeye's. Also made roasted turnips with bosc pears and whole garlic cloves and frozen peas. I was going to make sauteed cabbage, but I was having a rough time getting dinner pulled together as I decided to also make biscuits and I just was having to push myself to do any of it.

I subbed in 1/2 cup ww flour. They came out pretty. Bill said they tasted good. I just couldn't eat after dealing with the mess and my own disorganization tonight. Mind you I pressed them out a little thicker than the recipe calls for. And I made the yogurt variation.



Now it's all done and most of the dishes washed. I'm ready to relax.

1. How do you do the chicken?
I can't deep fry due to fire hazard, but I love the occasional fried chicken.

When in *America* I can't pass by a Popeye's.

9. No deep frying, or not what I consider deep frying. LOL
About an inch or so of canola oil in each of two cast iron skillets. A mixture of flour, Lawry's Season Salt, fresh ground pepper and fresh ground dried garlic, cayenne pepper; and an egg mixture of eggs beaten with a wee pinch of cream to which I added a wee bit of the same seasonings as in the flour.
Dredged the chicken through both twice and placed in the oil that was already nice and hot.

It really is very, very good, but I hate the mess and I hate the fact that our little house still smells like it this evening. Sometimes when I've fried something like this or eggplant, I will wake up in the middle of the night with the smell making me nauseous. I can just imagine how the smell would permeate the cabin on your boat!

Thank goodness he doesn't ask for fried chicken more than once every couple of months.

13. The boat can be really well ventilated. How many people have great big openable
windows in their ceiling, lol?

But the mess could be a problem. Still, I am going to try it the way you describe sometime in the near future.

How long do you cook it?

You know, I really don't know how long I cook it. LOL I just keep it going, until I feel like it's probably done. I've never actually timed it.

I start it out on high heat and then when it starts to develop a crust, I turn it and then turn the heat down some so it will it will cook inside well without burning on the outside. A lot of people will tell you not to turn it often but I think turning it, but not toooo often, makes sure it cooks all the way through.

I hope you get to try it. Really, nothing is better than home-fried chicken, even with the mess it can be worth it if you don't have to do it that often.

32. You may need less oil if you do as described but
make it a payard... aka flat. That way it needs relatively little oil, and it cooks very fast.

33. You mean flatten it by pounding? I plan on using bone in, skin on chicken.

35. Yes by pounding
use a chicken with no skin or bone. Cut the breast along the long side, almost all the way. Then open it as if it was a book. Place it in between two pieces of plastic and pound in it wiht a mallet until it is about an inch thick. Then flour, egg, and bread crumbs, and onto a hot pan it goes. It will cook in about five minutes. By the way veal also works this way very well.

I only have thighs, which is probably just as well as they will cook at the same rate.

36. Hmm.. Although the husband raved up this, I had an issue with it.
The coating was crispy and the chicken inside moist and delicious, but...

the coating did not stick to the chicken. It kind of formed it's own separate entity, leaving the skin underneath on it's own.

Is there something I did wrong?

37. I don't know.
I usually don't have a problem with that. Did you make sure the chicken was patted nice and dry before you dredged it? That's the onliest thing *I* can think of that *may* have caused that to happen.

Glad your hubs enjoyed it, tho. Sorry. :shrug:

4. I didn't know what that diet was so I looked it up.
Well, I had a problem like that right after starting some new supplements - too much magnesium! I figured to try something after I heard Dr. Oz talk about lack of magnesium causing the opposite problem on the new Oprah Channel.

Changed a couple supplement brands and paid attention to the magnesium in every supplement (I take quite a few, and many of them had a large dose). Honestly, a 3-4 month problem just went away.

and I did! and a good thing too, had to go get supplies before the storms hit tonight

and managed to have a meal tonight so i think i'm on the mend

5. Beautiful biscuits!
I love making biscuits (and pancakes) with yogurt. I make them with plain goat yogurt because I always have that around. Fried chicken is a fabulous treat but it does create such a mess in the kitchen I rarely do it for just the two of us, but sometimes I just have to have it. Molasses cookies with ginger sound divine. My Sunday was busy but rewarding. Glad yours was full of good food and love! :pals:

7. I empathize since I made spanakopita at 6:30 pm
We didn't actually eat until 8ish, and the filo had been sitting in the fridge for a while and looked a bit like ancient papyrus, but it was still pretty good. :D

The biscuits look amazing. Admire your chutzpah in diving in!

Really! I make these A LOT. The problem with the raisins though is that the dough is so stiff you can't get them evenly distributed, so don't frustrate yourself trying. :hi:

24. Sounds sooo good! Gale Gand makes a molasses cookie thats one of my favorites
with similar ingredients to your recipe but uses less flour and they turn out crispy. I love spice cookies.

I have yet to master fried chicken. Mine is ok...but not yummy. I have been thinking about brining the chicken first next time.
