Red Lentil and Rice Soup
Made this the other evening. It's one of my favorites not only because it's very tasty, but it's really simple and fast to make. Easily doable on a work night.



Red Lentil & Rice Soup\

2 tsp olive oil
1 carrots, chopped
1 large onion, chopped
2 cloves garlic, minced
2 tsp. ground cumin
7 cups reduced-sodium chicken broth, defatted, or vegetable broth
1 cup red lentils, picked over and rinsed
¼ cup rice, preferably short-grain
3Tbsp. fresh lemon juice
salt and freshly black ground pepper to taste
¼ cup chopped fresh cilantro

In Dutch oven or large pot, heat oil over medium-high heat. Add carrots, onion and garlic; cook, stirring, until softened, 3 to 5 minutes. Add cumin and cook for 1 minute more.

Stir in broth, lentils, and rice and bring to a boil. Reduce heat to low and simmer, partially covered, stirring occasionally, until lentils break down and rice is tender, about 20 minutes.

Add lemon juice and season with salt and pepper. Ladle into bowls and garnish with cilantro.

310 calories per main-course serving.

Blues Heron for your comments. Yes, this is a very delicious soup. Key to it's tastiness is the fresh lemon juice that is added at the very end. I made it for my book group the other evening and they all loved it.

Again, super easy and good for your too boot! Winning combination.
