Hi all. Haven't been in here much, but wanted to share this - Watermelon Gazpacho
If I can find some end of the season melons, I'm going to try this out. ~ pinto :hi:

Watermelon Gazpacho

Ingredients
6 cups cubed seeded watermelon
1 cup coarsely chopped peeled English cucumber
1/2 cup coarsely chopped yellow bell pepper
1/3 cup chopped green onions
3 tablespoons chopped fresh mint
3 tablespoons fresh lime juice
1 tablespoon extra virgin olive oil
3/4 teaspoon salt
1/2 teaspoon hot sauce
1 garlic clove, minced
1 cup cranberry-raspberry juice

Preparation
Combine first 10 ingredients. Place half of watermelon mixture in a food processor, and pulse 3 or 4 times or until finely chopped. Spoon into a large bowl. Repeat procedure with remaining watermelon mixture. Stir in cranberry-raspberry juice. Chill thoroughly.

2. This came out a killer opener on a hot day. Some greens, cheese and bread, cold braciole slices.

Do you think it could benefit from a shot of Alcohol? Tequila?

4. I saw a suggestion for a shot of orange liqueur in one take.
I just had mine with the cold plate line up and a Cape Cod.

5. No melons at the farm stand
It's been a cold summer. They just picked the first of our local (in town) corn. So I'm having that tonight with a lemon basil quinoa salad with those terrific green garbanzo beans from Costco.


Tomorrow I'll go to the grocery store and get a California Melon..... I'm excited!
