Seafood Stew . . .
I know that there are a multitude of variations, and the one I made here was super. Just google, and pick what suits you.

I used shrimp, scallops, and calamari.

3. Anything with shrimp, sweet and hot peppers, onion, tomato, and garlic
is great. You absolutely can't go wrong with it. Throw in other seafood, toss in something weird like crunchy water chestnuts or bean sprouts, serve over rice, and it's heaven.

That bowl of loveliness looks great to me. However, tomorrow will be scrod divan again, this time with a cheddar sauce.

5. I keep making fish stew and then keep losing the recipes
I made one last year that was spectacular - lost the recipe. Made one a few weeks ago, not nearly as good. Misplaced the recipe. There's got to be something psychological about it.

That does look good. What's the recipe? I might lose it, of course, but at least I'll get a meal out of it.

9. Oh gosh! I know what you mean
about losing recipes. I try so many and months will pass until I think of what I cooked, and then YIKES! "Now, where did I get that recipe." Oh well.

Here's the recipe that I used as a "base" for the stew. It's super easy. Seafood I used was scallops, shrimp and calamari. I'm sure I added smoked spanish paprika and spices to add some "heat".

Seafood Stew

Ingredients

3 tablespoons butter or 3 tablespoons margarine
1 large yellow onions, chopped
3 cloves garlic, minced
3 tablespoons all-purpose flour
2 (28 ounce) cans whole tomatoes, undrained and lightly pureed in food processor
1 1/2 cups chicken stock
1/2 cup dry white wine
1 bay leaves
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon dried thyme
1 teaspoon salt, to taste
fresh ground pepper, to taste
1 cup chopped fresh parsley
1 lb scallops or 1 lb white fleshed fish filets, cut into bite size pieces ( can use 1/2 lb. each)
1 lb large shrimp, peeled and deveined
1 1/2 lbs fresh clams, in shells well scrubbed

Directions

1. In a large Dutch oven over medium heat, let the butter melt.
2. Add in the onions and garlic; stir/saute for 5 minutes or until tender.
3. Add in the flour; stir until bubbly.
4. Add in tomatoes, broth, wine, seasonings, and parsley; simmer 5 minutes.
5. Bake, uncovered, in a 400° oven for 30 minutes.
6. Add in scallops/fish, and bake, covered, for 10 minutes.
