I am hungry this morning..

but I don't know what to eat. I don't want simple bacon and eggs I had oatmeal yesterday. I want something different any suggestions?

Any suggestions for dinner?

1. A BLT makes a fine breakfast
Or a bacon tomato and avocado on toast.

Or a toad in the hole -- tear a circle out of the middle of a piece of bread, melt some butter in a pan, put your bread down in the butter and crack an egg into the circle. Cook on both sides until your egg is the preferred done-ness.

Dinner? You'll find millions of ideas on the internet. One good place to look is at eatingwell.com

3. in fact, I'm going to go make a BT right now!
half of one, anyway. That's all the carbs I can take. I have some of that microwave bacon and it's soooo easy and quick. Mmmmmm.

5. So, what did you have?
we didn't do anything special..

we just had lightly toasted bagels with cream cheese and fresh melon.

But what did you settle on?

8. I took some leftover corned beef...
sauteed it with onion,peppers and potatoes with toast..

6. I usually buy or make a spinach quiche. It's quick and delishhh with fresh picked, sliced tomatoes.
Or migas is good too when I want to change up the egg thing.

7. For future reference, you might want to keep instant pancake mix on hand
Here's the way I make it.

750 grams AP flour(6 cups)
3 tsp baking powder
1 Tbs salt
1 1/2 tsp baking soda
6 Tbs lard (or vegetable shortening)
6 Tbs butter (cut into cubes)

Mix all ingredients in a food processor, dropping the fat in last at little at a time while the machine is running.
Use the mix within one month or store in the fridge up to 3 months.

To make the pancake batter mix 1 cup of mix with 1 cup of buttermilk and one beaten egg which yields about 8 dollar pancakes or 3 large ones. This is just the starting point. I always keep frozen fruit on hand for when I don't have fresh, so you just thaw the fruit out with a bit of tap water and drop on top after you pour the batter on the griddle. Bananas and vanilla extract is one of my favorite add-ons. You can always use regular milk and a bit more baking powder (leave out the baking soda) if you don't keep buttermilk on hand, but it won't turn out quite as good. I culture my own buttermilk so I generally always have some.
