1. As I've mentioned many times before
I pack Bill's lunch everyday. Every other week he wants PBJ's but in between I try to give him something different. Many times I make sandwiches of avocado, sprouts, spinach, tomatoes, cuke slices, and either spicy mustard or mayo. He really enjoys them and it's my way of getting him to eat a salad even when he doesn't feel like eating one.

Actually DREAMED about Pan Bagnat, which I used to find at lunch breaks, somewhere downtown, years ago. SO, just finished salad, and heading to grocery for more supplies for my healthy craving!

3. I do something similar
A sandwich that I just love. Very similar to yours except that I skip the cukes (they don't like me) and I substitute either redpepper or garlic hummus for the mustard or mayo. Yum! Makes for a tasty, healthy lunch that I enjoy.

5. That's what I did in the bad old days before microwaves at work
I'd pack pita bread, a little jar of garlicky homemade hummus, and a bag of veggies and just assemble it at the last minute so nothing got soggy.

I had a sick cat who required strained chicken baby food for a week, so I had plenty of baby food jars to use for hummus.

6. try using lettuce leaves to roll up sammy stuff instead of bread
i've been working out 6 days a week (!!!) and changing how I eat now that i'm 'retired'

since i'm trying to pump the protein and downplay the carbs, i've been having thin sliced meat with sliced cheese wrapped in a big romaine leaf

tasty, different and fast!
