I finally got cast iron pans
A combo cooker -3 qt Dutch oven with a 10" skillet as a lid.

Where have they been all my life???

11. You can't duplicate that crust with any other type of pan. I find that making
cornbread really helps season the pan. I guess it's from the fat that you melt in the pan and the high heat during baking. It does a wonderful job. Enjoy!

5. Almost indestructible
My Mom had one one passed down to her from her Mom, so there were many, many years of cooking. I was looking forward to owning it one day. Dang thing was huge and heavy. When my Mom was getting older, it fell to the floor and broke - split right down the middle. :(

7. They'll do that if there's a hidden flaw in the casting
usually caused when they ran out of iron and poured in a second batch to fill the mold. Usually that works just fine but once in a blue moon, the metal crystallizes in such a way to leave an internal flaw.

Heavy cast iron pipes also have the problem and are x-rayed for such flaws before they're put into service at power plants and the like---at least theoretically.

17. I've seen this happen to a few older cast iron pans
My dad had an old cast iron skillet that split in such a fashion and I've heard of other people tell the same stories about very old pans. I'm not sure if it's just the age that causes it or perhaps more modern pans are made better.

Pssst! I wash mine with soap all the time and dry them on the burner. I've done it for years and they still perform just beautifully! :D

12. Pssst! I wash and dry mine the same way as you whenever I feel I need to.
If they start looking a little dry, I just rub a little Crisco on them while they are still hot and then wipe them out with a paper towel after they cool. My daughter has inherited my big cast iron skillet and she refers to it as "Mom's teflon".

Depends on what I've cooked. Cornbread gets hot water and a nylon scrubber. Meat gets a few drops of soap.

I dry it on the burner and spray it with canola oil and wipe off the excess. So far, it's working!

I've missed you too! I paid a tiny amount to keep my membership so I could post here and in the gardening forum.

Hope the weather hasn't been too bad to you. My nephew was out chasing this week. No wonder my sister's a nervous wreck!

I just used one of my cast iron skillets to make a wonderful frittata. Shredded a whole russet potato, skin and all, put it in the skillet with both butter and olive oil. Let the hash browns fry on one side, then flipped them over and topped with orange bell pepper, onion, and mushrooms, beaten eggs, and shredded sharp cheddar. It was so goood! Nothing browns potatoes as crisp as cast iron.

We haven't had any weather mishaps here but that hasn't been true throughout the area. Quite a bit of damage around the area and the state this week. But it's spring time in OK. To be expected, I guess.

10. The best $1 I ever spent
was for a cast-iron dutch oven, complete with lid, at a local flea market. The lid even fits the old skillet that belonged to my late MIL.

I have two other cast iron skillets in various sizes. They're not on my list of things to rescue if the house burns down - they'll survive. Now what I need is a small dutch oven for deep fat frying.

15. I'll have to start checking out yard sales and flea markets
My daughter will be moving out and on with her life in the next year, so she'll probably take a few pieces of my lighter-weight stainless steel and Cephalon.

Can't wait to make my favorite red potatoes with onions and garlic and butter in the small dutch oven this weekend. That with some grilled chicken and I'm a happy girl. :)
