WHAT'S COOKIN'? First week of February - - - - - - - - - - - - - - - - - -
Yes, technically started Jan. 31st but who cares?

I went heavy on the meat meals last week so I plan to go lighter this week. Nobody seems to notice much. I feel some eggplant parmesan coming on.

Soup and salad. Pasta and veggies. The talk of omelets recently reminded me I can do veggie omelets for dinner and everyone is happy.

The weather is supposed to be cold, then rainy, then dry, then rainy.

Saving chili for the super bowl.

What are your plans this week?

1. Haven't a clue
I have leftover lasagna, ham, chicken and spaghetti in the frig. Hubby is gone so it's just kidlet and me. Maybe a pizza, grilled ham'n'cheese, I dunno. I have to go grocery shopping on Wednesday to stock the house while I'M gone to take care of mother. I have some tomato basil soup and quickie feed the teen-aged beast things. Not too motivated, maybe I'll make him some cookies or cupcakes. It's snowing and cold so I am not too motivated to do much other than fold laundry. Darn, I hate Mondays.

2. Kiddie comfort food for grownups tonight.
Sliced breast of chicken dredged in seasoned rice flour then dipped in a combination egg, 3 T. coconut milk & sriracha then redipped in panko crumbs and sauteed until crisp and brown in peanut oil. Served with EVOO oven fries of skin-on russet potatoes and steamed fresh spinach. Simple but satisfying. I have no idea what I'll do tomorrow. :hi:

3. I felt like going a lot lighter.
I bought mozarella, portabella mushrooms and picked up basil to make pesto for a couple of panini's. I wanted something lighter this week.

4. Sausage tortellini soup
I made a pot yesterday. Since I'm ready for some comfort food, it's meatloaf and garlic mashies tomorrow.

5. Roasted Beast

with the usual vegies on Sunday - sliced over fresh bread with gravy for Monday
potatoes leftover for hash browns over the weekend

winter cooking in the northeast...

6. I happened upon a really tasty wrap.
I took a whole wheat flour tortilla, spread some LF cream cheese on it, then some thinly sliced onion and some fresh spinach leaves. Finished with two slices lean deli turkey and rolled it up. Yum! A low-carb lunch.

7. Work has been kicking my butt again this week so far.
Sunday I marinated a couple of bison tenderloin fillets in red wine, a little shot of Worcestershire, kosher salt, pepper, garlic and capers. I flash seared one that night in the cast iron skillet for Bill and served them with parsley buttered potatoes and peas. I kept the second one in the marinade and did the same last night with the leftover potatoes and peas.



Tonight, it's just gonna be sloppy joes and fries. But I use a bulk breakfast sausage from one of our coop producers. The seasonings already in the sausage add a nice little zip to the joes. That's about all I have the energy for. :hi:
