I just cooked on the stove, over slow heat, a combo of minced onions and garlic and mushrooms and carrots. I added wine. Now I want to cook three small lamb chops. What do I do with the mirepoix?
I think I just don't get it. I know it is supposed to add a richness but I'm not sure how/where.

P.S. I had no celery (I know mirepoix is supposed to have some.)
It was delicious. The mirepoix does give a rich flavor. I cook lamb so infrequently that I hate to goof it up. The chops were about medium - a bit more cooked than the afficionados care for, but I thought they were perfect.
