Just what do I do with a mirepoix?

I just cooked on the stove, over slow heat, a combo of minced onions and garlic and mushrooms and carrots. I added wine. Now I want to cook three small lamb chops. What do I do with the mirepoix?

I think I just don't get it. I know it is supposed to add a richness but I'm not sure how/where.

P.S. I had no celery (I know mirepoix is supposed to have some.)

1. push it to the side and toss the lamb in

scoop the mirepoix over it and let the lamb cook in the jus

It was delicious. The mirepoix does give a rich flavor.
I cook lamb so infrequently that I hate to goof it up.
The chops were about medium - a bit more cooked than the afficionados care for, but I thought they were perfect.
