First batch of marshmallows
They were so much fun to make that I wish I'd made these years ago. The Kitchen Aide whipped it up very quickly. I almost like it better right after it finishes whipping. The warm, sweet flavor is great. Even though it's the first time I made them I feel confident enough to give some as gifts tomorrow to my neighbors. I got the cellophane bags from the floral department at the grocery store.

I let it sit overnight, cut the pieces with kitchen scissors and rolled them in powdered sugar.


I couldn't seem to get the glare off the picture - white is a tough color to photograph.

They're gorgeous!

They are REALLY easy, aren't they? I just finished up a batch to ship out tomorrow along with some cookies and caramels to my sisters who tell me year after year that all they want for Christmas is some of our family's favored Christmas cookies. They'll have a few surprised this year, along with the cookies. I'm hoping to coat some of those marshmallows and caramels in chocolate for them this year.

Do tell how the coated ones turn out. Decadent, for sure!

We could have fun making these all year. Although I got some peppermint flavoring and food coloring to make them with the red marbling on top, what I really want to try is other flavors like maple or orange.

Many of the sites with the recipes say that these toast up well at the campfire. That was always a favorite when I was little. We'd even use the kitchen gas stove in the winter. :D

7. on food network the other night they stuffed a turkey with marshmallows
...It was one of those challenges with mystery ingredients. The contestants had to make an entree with a 12-pound turkey, kale, rutabagas and marshmallows. Ha!

One guy stuffed the breasts with marshmallows. Ugh. I think the winner was the one who used the marshmallows with the rutabagas to make a sauce.

Just so you know they ain't just for toasting anymore!

Oh no! Now I like rutabagas. Mashed with butter, black pepper & salt. But they just don't sound like they're in the sweet potato category where they can partner with marshmallows. Sounds like the chef pulled it off knowing more about the science of the ingredients.

12. I delivered them today
We have some new neighbors across the street who are terrific. The hubby told me he likes marshmallows a lot and I can test new flavors out on him. Oh joy! I figure that I shouldn't eat a lot of sweets but I can still have the fun of making them. :D

Except I used some canola on the pan and first lined it with waxed paper instead of foil. It dried much faster in this climate. But it was kind of late so I left it overnight and covered it with another piece of waxed paper.

One piece of advice I remembered from a recipe at a blog was that not every packet of the unflavored gelatin has exactly one tablespoon of gelatin. It's true. Every packet I opened had a lot less. So I was glad that I bought extra and could get accurate measurements.

As I don't eat gelatin, I had a look around the 'net for alternatives and came across a rather unique blog:
Vegan Marshmallows

That's all that blog is about! Nonetheless, it appears he's done his homework and managed to make a recipe similar to something like yours, yet gelatin-free. I may have to try it; I'm just lousy at cooking sugar without burning it, even with the help of a candy thermometer :o

15. I made both Chocolate and Vanilla Marshmallows the other day
and sent most of them off to my sisters for Christmas. A few of them I coated in dark chocolate... mmmmmmmm.

Right now I have some thawed raspberries in the refrigerator waiting to be pureed and turned into marshmallows... I'll let you know how they turn out.
