What cheese would go best with the roast beef I have?

Or, how can I make a kickass bagel sandwich? :D

1. Cheese with beef
Aside from cheeseburgers, I don't think cheese goes with beef very well. Maybe cream cheese?

9. Ham isn't beef

Philly cheese steak sandwich, yes. For sure.

On edit: you did ask about what to put in your roast beef sandwich. I was only thinking about roast beef.

2. I've always liked cheddar with roast beef, but really, any cheese
would be good. Mmmm, what about pepper jack?

3. Swiss cheese - hands down
The smellier the better. Jarlsberg would be my choice. But any swiss is great. A little mayo and sliced tomato. Mmmmmm-mmmm.

7. I rarely put cheese on a roast beef sammich
But when I do, I usually use Swiss. More important for me is a ton of horseradish, salt, and pepper. Some people add mayo to this, but I don't. Just that hot clear-yer-sinuses horseradish.

10. Veggie Yogurt cheese.

I found this stuff in Indiana; it's terrific and goes really, really well with roast beef.

13. When I buy bagels I always get the "everything" kind
and always say to (usually a young kid) person serving me .... "give me the seediest ones ... cuz I'm a seedy character". Sadly, young kids who work in bagel shops rarely get the joke. I'm sure they're thinking "Yeah, whatever, y'old coot. Just buy yer shit and leave. I'm here till 5 and have to put up with this, but then I'm outta here." Said aloud ... "Have a nice day".

14. Me, too! I love the 'everything' bagel!
Sadly, they're not as good in Houston as they are in NY, but beggars can't be choosers. :)
