How about Easy and Tasty?
I like to saute either chicken or broccoli (depending on my mood) in a small pan with lots of chopped fresh garlic and curry powder and melt cheddar on it at the very end. This is very yummy and works well as a sandwich or pocket filler or over ramen noodles or even just by itself.

Don't ask me why, but I always do all chicken or all broccoli and never mix the 2! I think this is because the little sandwich shop where I first had this combo only offered it that way - Regular (chicken) or Vegetarian (broccoli).

I'm having a hard time rolling curry and cheddar around my tongue in this virtual tasting. Could just be me, tho.

2. I thought the same thing the first time I saw that combo at this little place
Try it and you will be surprised. They go well together. I like it when something I would never have thought of on my own turns out to be good. :9

3. one of my favorite easy casseroles...
...is a faux chicken divan that starts with poached or leftover chicken breast and blanched broccoli and is slathered with a curry and lemon bechamel, then topped with cheese and baked til cheese is melty. Mid-century recipes for this used mayo instead of the bechamel and it is easier but gloppy.
