Scandanavian sushi?
Found a great combination for tiny bites! I made gravlox using one part sugar, one part salt and dried dill. Cover the salmon with dill, place on a bed of salt mix and cover with remaining mix for at least 24 hours. I like to go 30 or so hours myself, but it's to taste. Soak the gravlox in cold water for a few minutes to remove curing salt and pat dry.

Now for the sushi! Slice very thin strips of lox, see-through thin. You'll need strips 1 inch by 3 inches. Spread lox with wasabi (to taste here, but us Texans have been known to eat Jalapenos with breakfast so start slow), place a dab of cream cheese on one end and roll into a rose. It makes a pretty presentation and gives a heck of kick to lox and cream cheese.

Surprisingly it makes a difference where you put the wasabi. It has a lot more kick if you put it on the fish with cheese on top than if you spread the cheese and put it on the cheese. I guess it's the interplay of dairy and capsaicin or whatever horseradish has in it.

You can vary the taste from mild surprise to clear the sinuses shock by changing the amount and location of the wasabi.

Anyway, everybody here loved it.
