I always thought Amaranth was like Wheat. When I ate a Vegan diet I ate a lot of grains and I distinctly remember one of my very favorites was an Amaranth and Triticale combo made into a Cereal. So does your plant actually have grainy things on it that you could mill into flour? This is one of those things that you'd need a Vitamix for. Are you suppose to roast the grain before milling?
If your plant doesn't look like the one in the picture I wouldn't recommend eating it like that then. Maybe you have Red Sorrel? Do you have an Agricultural Extension office near you that you can bring a sample in and have it checked out?
I really don't have a clue...Just pondering.
