3 bucks. They're "seconds" but the flaws are purely cosmetic.

Also had eggplants on sale at three for a buck.

(This was last night, when they want to get rid of everything after the weekend people are gone.)

As I was loading up the car with these and other goodies, I tried to remember I live alone, but those visions of eggplant parmesan and ratatouille kept dancing around my head. And the insane idea that I should freeze up a gallon or so of sauce.

(This is going to be a lot of work.)

I know what you mean - I have to be extremely careful when going to the Farmer's Market, have to exercise restraint.

And thanks for reminding me about ratatouille! Haven't made that this summer yet. Now I know what will go on my Farmer's Market shopping list.

Just roasted eggplant mixed with roasted garlic and EVOO and lemon Juice. If I have it, I mix in some tahini or just add hummus. I love it.


Also don't forget to feed your face with veggies and fruits. If you have any scraps left over even just the peelings. Throw them in the Processor with some Egg White (for oily skin) or Evoo for dry--or a combo of both and use the paste as a mask for your face. Strawberries are great as are cucumbers, tomatoes, eggplant and zucchini.
