What's Fer Dinner
Gorton type of Fish patties and a salad from first pickings of the romaine and spinach! Huzzah!

Raspberries and raspberry vinaigrette (bottled, sorry!).

Leftover fish will make a great fish sandwich for kidlet in the a.m. Hubby's lunch for tomorrow I topped with those fake crab thingies. You know what I mean.

AIN5 is aging for the weekend. Turkey is on sale, I'll probably roast a biggie. One for the weekend and then leftovers with taco seasoning for the poker boys next Friday. Still contemplating pretzels from the AIN5 for them.

1. SO made dinner tonight.
He made a delicious quiche with spinach, baby portabellos, onion, feta and cheddar cheeses with baked sweet potatoes.

I made a cheesecake and a blueberry sauce for dessert later.

2. Fried filet of sole, baked sweet potato and spring greens salad
The sole was coated with Italian crumbs and fried in corn oil. I haven't used corn oil in years. But we got some right before we got a hot air popcorn popper. So now I have a bottle of it and used it tonight. I forgot how delicious fish tastes fried in corn oil.

3. Those fake crab thingies?
I love them, and at this site - http://www.heyitsfree.net/free-coupons/ - I printed up 3 one dollar off coupons for them. A specific brand, I forget what it is, but it's the one I always buy. Used them today, in fact.

These sites don't always have good stuff, but when they do, they're pretty cool....................

I know they're fake, made of general fish, but they are tasty in salads or pasta.

There's just enough left for a combo of celery, onion, mayo, etc. to make a seafood salad sandwich or two. That's for when hubbyis golfing and after grocery shopping. Maybe I'll toss some pepper in there after I make mine. I just don't do raw pepper OR onion well.

We got the green light on hubby's cholesterol - not that it's good - but diet made NO difference. I mean we cut all beef, chicken, turkey, pork, butter, chocolate, cheese, eggs - ugh - it made it a pain in the rear to cook. I had been using buffalo, low fat meats, skinless chicken, no butter, cheese as a flavor only, eggs only for cookies and the like. Greens running out of our ears.

It has got to be a genetic thing. Liposuction is the only other answer.

I'm going to attempt a blackened turkey in advance of the blackened salmon for Father's Day (by request). Any tips or hints?

16. I make a "crab" casserole with them.
Like the one you find on a Chinese food buffet. :) For a real short cut I use a Ranch style pasta salad mix, 2 packages fake crab, 1 tsp dill, 1/8 tsp pepper, 1 tsp Worcestershire, 1 cup mayo and 1 cup of butter bread crumbs. Oh, and garlic....at least a clove. Bake at 350° for about 30 minutes.

They're pureed haddock, infused with "crab flavor"
that's steamed out of the leftover shells at crab-processing factories...
they have the texture of soft rubber, and they are just the best thing
to eat cold with a warm 'dipping sauce'.

A lot of folks look at them as "Cheap Crap"- I prefer
to look at them as a great example of the
"using every part of what you kill" concept.

Big enough for 2 meals. Summer sausage, green pepper, mushrooms, olives, tomato paste and store bought mozzarella. Fucked up the homemade recipe again. Jeebus.

Roast a turkey. We could eat off it for days, just the two of us here. (giblets for the cats too).

pasta with veggies. I'm tired from a long day of work, so I sauteed some garlic, yellow and orange bell peppers, roma tomatoes, sliced zucchini and sliced mushrooms (all stuff I that was readily available in my kitchen) and served it over pasta.

Actually for a thrown together meal, it's mighty tasty.

Oh yes, a glass of fine red wine accompanied my meal.

What should I have with them? A baked potato? Some bacon?

I better nix the bacon. I'm trying to lose another 10 lb or so.......

Ciscoe Morris is a gardening guy with a show, Gardening with Ciscoe. that's on Northwest Cable News. He's a hoot to watch and has a whole page of brussels sprouts recipes on his web site. It's kind of an ongoing joke with him telling everyone to eat their brussels sprouts.

11. One of my old favorites
is to stir-fry some garlic and onions and ginger in peanut oil, with the wok very hot, and then take them out, add the cut-in-half Brussels sprouts, stir-fry them until they're browned (it won't take long with the high heat), and then toss back the onions and garlic and ginger and stir in some garlic and brown bean sauce, and, if you feel like some sweetness, some hoisin sauce.

Turn off the heat, stir in some black vinegar, or some balsamic if you don't have black, and a hit of sesame oil, garnish with chopped scallions.

Serve with rice..................

Still trying to figure out what to do with the Tilapia.

I've been around for a while, just lurkin' so I'm up to speed on AIN5, TAB, hippywife and general stuff.

I'm definitely a foodie though.

14. The beautiful thing about Tilapia, is that you can do ANYTHING with it.
It's become popular because it's just so darned VERSATILE.
