I just had a yummy lunch. Shrimp soft taco!
Very easy and healthy too!

I bought a bag of already boiled, peeled, and deveined shrimp. I heated the shrimp on paper towels in the microwave, since they tend to hold a lot of water. I put the thawed shrimp in a whole wheat tortilla, put a slice of 2% swiss cheese on top, and microwaved it til the cheese melted. I added a dollop of picante sauce, and half a mashed avocado, and had a salad with it.

1. YUM indeed! I found out my favorite "farmers market" has fresh
seafood delivered daily

they had some great looking shrimp from Baja

it's on my list for next week
