Friends, might anyone have ideas?
My mother made a great cake, what she called either pineapple cake or hawaiian cake. She passed on recently, we were unable to find her recipes, and I thought of this cake today. I've looked online, but found nothing that sounded similar.

NOT an upside down, not bundt, no 'icing.' Contains some coconut, some nuts, 'regular' flour. Moist. Not pineapple 'rings,' unless cut up. No cherries.

I'd appreciate if something similar pops up.

7. I make a mean hummingbird cake
Of course I tweak....I use a caramel/whipped cream filling and cover the cream cheese frosting with toasted coconut. There's never too much gilt..(or in my case guilt) for the lilly in my sweets book....Except for a good flour less chocolate cake which should be left pure except for a light dusting of powdered sugar.
