Ya know Tab's trick to defrost food from the freezer?
I needed to soften some butter so I can get some of my baking done tonight since we're having company for dinner tomorrow. All my butter was hard as a rock in the fridge and was gonna take forever to soften coz it just ain't all that warm today.

So, I was washing my stainless sauce pan and got to thinking, I bet that trick would soften my butter faster. So I flipped it over on the counter and, voila! Softened butter in no time flat. :thumbsup:

3. Put it on a thick piece of metal
it conducts the cold away from the food

I've got those thawing trays and they really do work. It's just a piece of very heavy metal. Cast iron would probably work well.

I heard the same thing from America's Test Kitchen or Cooks Illustrated. I can't remember which.
