The challenge ingredients: tamarind, potatoes, creamed corn, arctic char.

What would you have made with those?

My first inclination would be, I think, a chowder.

All of these contestants grilled the char and plated it with various things. One guy added bacon and black beans. Another had trouble with his unfortunately "al dente" potatoes that he whipped with tamarind paste.

It was a fun competition.

1. That's one of my favorite shows. The tamarind really threw me
so I was clueless. Chowder would have been a good one for sure.

2. I think I'd have done a tamarind based rub for the char
and pan seared it and finished it in the oven. The corn and potatoes would have been some sort of timbale.

Alternatively, I'd have filleted the char paper thin and wrapped it around the corn and potato mixture, again seasoning the exterior with a tamarind rub and pan searing it quickly.

The key would be a sauce to tie it all together, in either case.

I'm not crazy about either arctic char or tamarind. Were I to be served any of this, I'd probably hide the fish under the parsley and make a meal of the corn and potato.

3. I love this show.
I think chowder would have been a great idea. I would have had no idea what to do with the tamarind - absolutely clueless.

:hi:
