Whats for Dinner? ~ Tuesday March 3rd
Afternoon!

I'm thinking it's going to be a nice big buttery omelette for me tonight.
I'm wanting something light.
If Bill isn't in an oeuf-y mood, he'll probably whip up a beef stir-fry or beef fried rice.

What's for dinner where you are?

1. Not sure but
I sent the rest of the sloppy joes and peas (I decided against the corn) in Bill's lunch today. Gonna hafta figure out something. Bad thing is, when I'm at work, I can't remember what I have at the house.

2. Spicy stuffed peppers.
I had some leftover Zatarain's jambalaya rice which had added shrimp and chicken in it.

So instead of the usual stuffed green pepper mix, I used that. Topped them off with hot salsa and pepper jack cheese, then some plain tomato sauce to mellow it down a bit. Wow, that was good! I'll have to remember this one.

Their stuff is pretty tasty! Sounds like a perfect stuffed pepper filling.

coz I don't feel like putting together anything complicated. I'm mixing some cream cheese and some soft goat cheese, and seasoning it with some finely minced fresh parsley, minced garlic, a small clove of a shallot (also minced), some crushed almond slices, salt and pepper. I'm going to spread it on some small whole wheat tortillas and add some slice olives, slices of cherry tomatoes, diced red sweet pepper, and avocado and roll 'em up. Might throw some fresh spinach or mache in there before I roll 'em.

9. They really are delicious.
Bill loves them, too. And the best part about it is that I threw these together because he didn't feel like eating a salad. ;) :rofl:

15. pizza, but
my DH was late so his was dry. I can't wait much longer than 6:30 to eat so I ate mine without him. Otherwise I'm grabbing stuff out of the snack cupboard. He's working later because he's worried about job security. Even though he's got a good rating and all, and seniority, everybody is getting pretty jumpy these days. Plus he's got extra work because the guy in the next cubicle got the ax.

He did bring home some girl scout cookies purchased from the manager's daughter. ;)
