I made Soy Chicken and Dumplings
I had been wanting to try this for a while and finally got around to it. I surprised myself as it turned out really well and was very yummy. Although I cut my dumplings a little too big and had to chop them up after they started swelling in the stew. Next time I'll know to make them smaller.

I didn't take any pics, next time I make it I will.

soy chicken? How did you prepare it?

We're steering away from soy unless it's organic. Once again, the majority is made with GM soybeans. It's really too bad because the MSF Chik'n Nuggets were a favorite quick and easy dinner around here on those nights we were too whipped to whip anything up. We loved them especially in Thai peanut sauce or buffaloed with bleu cheese dressing.

Have you tried Quorn chik'n products? They aren't soy, but mycoprotein. I've used the tenders in pot pie and chicken salad so far. And the Naked Cutlets make awesome sandwiches in a pita (or a homemade wheat roll) with some sprouts, avocado and tomato slices, with some fresh baby spring greens, a little crumbled gorgonzola. Really awesome sandwich. That's as far as I've gone with them tho.

I bet you've tried them, tho.

2. MSF's Soy chicken
I haven't heard of Quorn :( and Kroger's probably doesn't even stock it, but I could ask the manager of frozen foods to try and stock it for me. Never hurts to ask. But I'll probably get the run around.
Your sandwich sounds really good :)

I made it the way I usually start my pot pie. Melt some butter add onion, bell pepper, carrots, soy chicken, coat with flour then I added milk and water let simmer then I added the dumplings. Also S&P along with some garlic powder and lemon pepper. I think the next time I make it I'll add the "chicken" with the dumplings and see if it works as well.

I never made my own dumplings so I wasn't sure how they would turn out, but they were really good. As a kid we used canned buscuits and cut them in quarters and added them to the stew.

I hate that we don't have labeling identifying what's in our food products :grr:

3. If there is any sort of a health foods place around you
they probably have Quorn products. My grocery doesn't carry them, but every health food store in town does. If they don't, they're more likely to order them on request.

I love all their stuff. Their breaded chicken cutlets are wonderful in any recipe that calls for breaded chicken and their naked cutlets are great in any recipe that calls for plain chicken. Their gruyere cutlets are to die for.

It's a little on the pricey side, but you're not paying for skin, bones, cholesterol, or the evils of factory farming.

4. I did read up on Quorn and liked what I read
The only problem is not having a location very close to my house. :( But there's a couple of stores that sells them close to one of our clients and another close to my in-laws so we could always make a run when we're in their neck of the woods. :D

5. It's worth checking any big grocery in your area.
Surprisingly, I can get it here in OK at a local grocery that isn't even an outside chain. I can get it in one of their locations in town but not in another. They have them stocked with the MSF stuff. I just never noticed it before coz I wasn't looking for it. We also have Food Pyramid stores (bought out Albertson's) and they carry some, but not all of their products back in their designated "organic and natural" section.

Ya just never know what you might find.
