what am I supposed to do with the egg yolks?

what am I supposed to do with the egg yolks?
i am making a cake that called for 3 egg whites..... what the heck do I do with the egg yolks?

I have some leftover lentil soup-- stir em in there? or nuke em til they're hard and put them on tonight's salad??

what do YOU do with egg yolks?

My SO made that once with scallops (or was it shrimp?). A lot of work, but so delicious.

4. recipe? Dang, I was going to order some cream from the dairy last
week and didn't cuz it added too much to the bill

5. I freeze them.
Then in 6 or 8 months when I run across them I throw them out. I am so lazy.

6. ROFL that sounds like me. I have had so many "mystery packets"
in my freezers

I am getting better though about marking stuff (but still FAR from organized)

I ended up putting them in the lentil soup but it really didn't add anything to the soup other than a strange color/texture. It was still good enough to eat with a salad and my sheepherder potato bread from this weekend


i did make a cake mix and some yummy cream cheese frosting

Cream Cheese Frosting

9 ounces cream cheese, softened
1 tablespoon butter, softened
1 teaspoon vanilla extract
1 3/4 cups confectioners' sugar, sifted

Mix in a bowl and beat with an electric mixer. If necessary, add milk to make of spreading consistency.



The Beast beat it up beautifully and I needed no milk for consistency. Much better than the store brand, has a nice "bite" to it. :)

8. I was going to suggest egg drop soup
But I guess the whites are important for that. If you have pets and they can handle egg, they might like a scrambled egg yolk for a treat.

10. I kept a freezer log for awhile.
Put everything on an inventory with a date and then crossed it off when I used it. That way I could just flip through the paperwork and see what need to be used or losed. Unfortunately, I have not been that organized recently. But it was a great system, and not much work after the original inventory effort. I need to get back to it.

Fried Rice, yummm

Custard, or as a base for custard ice cream. I can't wait until my kid wants egg whites so I can make more BTS lemon custard ice cream.

Chocolate pudding.

Base for French toast. Mix with light cream, and orange juice with a little orange zest, have some stale bread available to sop up the mixture and bake or fry.

Hollandaise sauce.

11. The fried rice is a good idea for left over egg whites, too.
And it is something I actually make.

I always think, I will freeze these left over egg whites or yolks and then make something fabulous with them at a later date. Of course I never do.
