"Everything" topping for rolls, loaves, or bagels

Thought I'd share this since it was so good!

I made a dry topping to sprinkle (heavily) on top of rolls or loaves or bagels

poppy seeds
crushed onion flakes (use rolling pin to lightly crush)
kosher salt
black cumin seeds (substitute caraway seeds)
garlic salt
thyme

spritz risen loaves with water, then sprinkle on the topping mix. To get the sides, hold a spatula or dough scraper next to the loaf and bounce the topping onto the sides

I used this with some Ain5 dough and it was very nice.

one thing - at 450 for 30 mins you are pushing the envelope as far as burning the onion flakes. my rolls (small loaves really) took 27 minutes and some of the bigger onion pieces were almost too blackened - so thinking about tenting next time with some foil for the final 5-6 minutes.

Several days ago, my son commented that it would be even better if I made it a little shiny on the top and used some "sprinkly stuff". I just hadn't bothered to look for a topping, and now I don't have to. I don't have cumin seeds or caraway seeds, but I'll improvise with whatever I find and see how that works.

and I will take your advice on topping the Ain5, too. Great idea!

I usually use poppy seeds, caraway seeds, sesame seeds, kosher salt, finely minced garlic and finely minced fresh onion. The fresh onion might stand up to the heat better, maybe? Not sure since the bagels bake at only 350.

I brush them with a mixture of egg yolk and a little water and then top. The onion and garlic take the longest time and get a little tedious but the results are always worth it.
