How long does buttermilk last?
Why, oh why won't the sell buttermilk in half-pints? Today, they didn't even have pints. I had to buy a quart to get 1/2 a cup.

So, how long does buttermilk last? It comes home from the store looking spoiled. :)

Also, if anyone has recipes that call for buttermilk, please post them.

(Maybe it's about time I marinated some chicken in buttermilk and tabasco overnight before I fry it. Hey, I think I just solved my own problem.)

4. How much vinegar to how much milk?
How do you do that? What kind of vinegar? Does it have to sit for a while?

5. white vinegar or lemon juice
Buttermilk Substitute

For 1 cup, use 1 cup plain yogurt or sour cream; or
1 tablespoon lemon juice or vinegar plus enough milk to make 1 cup; or
1 cup milk plus 1 3/4 tablespoons cream of tartar; or
1/4 cup buttermilk powder and 1 cup water.

2. chicken soaked in buttermilk
makes the best fried chicken. Outrageously good. If I'm gonna eat all the fat, might as well make it the bestI can.

Buttermilk waffles? If there's any left over.

I too hate the fact that you have to buy a quart. I use to buy some dehyraded stuff that you added to the dry ingredients. It lasted forever, but it's probably full of fake stuff. I don't know; I never looked at the back. Just got tired of not having buttermilk when I wanted to make waffles. The nearest store is a long way away.

Have fun.

best

3. Thanks
I've been thinking more and more about waffles. I don't have a waffle iron. I may have to get one.

because I like it.

Really good buttermilk pancakes

1 cup flour
sift with 1/2 tsp each salt and soda &
2 tbsp sugar

melt 2 tbsp butter

1 egg
1 cup buttermilk

combine wet and dry ingredients.
cook like any other pancakes.

very good.

OR you could:

Make a german chocolate cake

make some buttermilk biscuits

marinate the chicken in buttermilk and curry spices and you have chicken tikka

look around your cookbooks for chocolate cake recipes, the best ones use buttermilk.

10. i cheat and use the Bisquick recipe for rolled biscuits but I
use buttermilk instead of milk or water, and add just a pinch of baking soda. Makes wonderful biscuits.

Most everyone made their biscuits w/buttermilk and soda rather than reg milk and baking powder (back in Kentucky, in a time when people still made biscuits from scratch every day)

7. That's the ticket
I don't think there is anything quite as tasty as fried chicken that marinated in buttermilk overnight. I think I'll make some next week. :D

11. I've used it past its expiration date...
...in cooked dishes, but probably wouldn't do that with salad dressing or something where the buttermilk isn't heated.

I, too, have kept the powdered buttermilk on hand. Why not? People use powdered milk for cooking all the time.

12. I've used it a month after expiration date
and I've never become ill. If a quart is too much for you, try adding it to tomato soup - it's great!
