For Hippywife and other fans: Caraway Swirl Rye
Here is the ingredient list for AB in 5 Caraway Swirl Rye

3 cups lukewarm water
1 1/2 tablespoons yeast
1 1/2 tablespoons salt
1 1/2 tablespoons caraway seeds, plus more for sprinkling on top
i cup rye flour
5 1/2 cups unbleached all-purpose flour
Cornstarch Wash:
Using a fork, blend `/2 teaspoon cornstarch with a small amount of water to form a paste. Add 1/2 cup water and whisk with the fork. Microwave or boil until mixture appears glossy, about 30 to 60 seconds on High.

Everyone knows how to mix it so I will continue from the time after the dough has been in the refrigerator.

Take 1 pound of the dough and shape into a ball. Using hands and a rolling pin, flatten the ball into a 1/2 inch thick oval (avoid using extra flour here or it might remain as a dry deposit in the caraway swirl).

Sprinkle the dough with caraway seeds according to your liking. Roll up the dough from the short end like a jelly roll. Pinch the ends closed.

Rest on peel for approximately 1 hour 20 minutes. Paint the top crust with the cornstarch wash and sprinkle with caraway seeds. Slash deep parallel cuts across the loaf with serrated knife.

Have your baking stone in the middle of the oven with a broiler tray underneath the stone.

Slide the bread on the stone and pour 1 cup hot water in the broiler pan and quickly close the door. Bake 30 - 35 minutes or until deeply browned and firm.

1. Sounds really good!
And here I am stuck in the house without any all purpose flour. I new I was low and meant to stop on the way home yesterday but was stuck in traffic for an hour due to an accident on an icy bridge and totally forgot.

How are you fairing down your way?

4. Now that I take stock of
the baking cupboard, I have maybe a couple of cups of bread flour, a couple of cups of semolina, about a cup of whole wheat pastry, maybe two cups of rye, and maybe or five cups of whole wheat. I made whole wheat sticky buns, cookies, wheat bread and buns this past weekend. I seriously need to restock.

6. Trees are cracking and falling!
We keep our firewood in an old dog pen with a metal roof. The tops of two trees have crashed down onto one end of the roof (the end with the gate). I am going to have to remove the dog house attached to the other side and crawl through to get wood. We still have power though it has flickered several times. It is still sleeting very hard and there is no way I am even trying to get to town. We have plenty of food and supplies and it is supposed to be above freezing by Thursday.

7. I may have heard one fall earlier but not sure.
I am so sick to death of being in the house today I could scream! You be careful crawling in there for that wood, too. :hi:

3. Thank you! I havent been able to buy the book yet, so I made an experimental rye base last night
It's good to have a recipe that's tested in case mine sucks.

8. Sounds beautiful.
Is there any purpose to the cornstarch mixture other than to make the seed stick to the surface? Wondering about egg wash.
