Braised Flank Steak with Lemon and Garlic

I fixed this today and it's delicious. Probably used a little bit more garlic than it calls for but that's the only change I made. The thin slices are fork tender.

The sides were steamed swiss chard and homemade mashed potatoes.

INGREDIENTS

* 1/2 cup all-purpose flour
* 1/2 teaspoon garlic powder
* salt and pepper to taste
* 1 (1 1/2-pound) beef flank steak
* 1 tablespoon cooking oil
* 1 (13.75 ounce) can chicken broth
* 2 teaspoons lemon juice
* 2 cloves garlic, minced
* 3 whole cloves

DIRECTIONS

1. Mix the flour and garlic powder together in a shallow dish. Season with salt and pepper to taste. Dip the steak in the flour mixture evenly coating both sides. Set aside. Discard remaining flour mixture.
2. Heat the cooking oil in a skillet over medium-high heat. Place the steak in the skillet and cook until browned on both sides, about 5 minutes for each side. Stir in the chicken broth, lemon juice, garlic, and cloves. Bring the mixture to a boil over medium-high heat, then reduce heat to low. Cover, and simmer until steak is tender, about 1 1/2 hours.
3. To serve, remove steak from the skillet, and slice across the grain in thin strips. Place on serving plates, and ladle sauce over meat.

1. I haven't had any good beef in awhile

2. Before this I couldn't make good flank steak to save my life
So when this one came out so tender and flavorful I had to post. :9

3. here's one to try next time...

score the flank steak lightly in large diamonds
marinate in a dressing like Newman's Low-fat Caesar an hour or more
then grill or broil until quite rare
slice diagonally as you always do with a flank
lay out on a baking sheet (along with all the juices that have run out)
and sprinkle over the slices the following mix:
- equal parts blue cheese and butter mashed together with chopped onions added (fresh or dry)
broil until the topping bubbles and begins to brown.

I found this recipe in 1972 - Flank Steak Scandia... everyone who's ever tasted it has swooned... everyone.

I wish flank steak was a cheap as it was back then, we'd swoon more often.

4. Whoa! This recipe had me at blue cheese and butter
The pricing of flank steak is a sin. I got this one in the markdown bin for $2.00 The butcher had just marked it over in the regular meat case and put it in the bin. I bought it right away.

Thanks for this recipe. I like all the ingredients.

6. I was surprsed to see that, too
Maybe the chicken broth goes better with the lemon juice.

Lemon and beef sounds odd to me also.
