Hey Empress, I cooked a flat iron steak tonight
I finally found them around here at Kroger. I happened to be there tonight and am chicken and fished out. :P

So I got a flat iron instead.

Really tasty, even though I cooked it in my little toaster oven.

2. Yummers....Those are some good eating...
I can sometimes get them for $2.99 a lb but more often for $4.99. Well worth it for a "value" cut. I usually cook them in the cast iron skillet to get a crust because otherwise they are too soft for me. They have terrific flavor. They are the only steak that I've found that doesn't lose flavor or texture with freezing so when I can score them on the cheap side I load the freezer. The only non aged steak I like better is the hanger steak but more often than not you need to sleep with a butcher to get one of those.

3. I thought about the CI skillet
but I cook my eggs in it in the morning and I didn't want to have to clean it out afterwards, so the steak went into the oven.

I had been looking for them ever since you mentioned them, and this was the first time I'd seen them in the store. These were $4.99/lb and the one I got was about 3/4 lb. Just the right size for a couple of meals for me. :D I'll have a nice steak for lunch tomorrow too.

Son-in-law cooked them up a while back. They really are tender and good.

I buy my meat from in the coop and he told me he'd make some of these available next month. Head's up to sazemisery if she'd like some. :hi:

8. Hey that's great
that you'll be able to get them at your co-op.

I want to get to the Durham co-op this week, but haven't been able to yet. I don't know if they have a butcher or not. I want to see what's there. Supposed to be very reasonable prices.
