OMG you guys, don't faint but I'm actually COOKING right now!

this new schedule is playing havoc with me in the kitchen, we're living out of the freezer and it sux!

I'm trying a new (to me) recipe for a pot roast.

I have a 4" thick/wide by about 10" hunk of Chuck Roast in the oven. I coated it with flour, season salt, pepper and Mrs. Dash, coarsely chopped a LARGE yellow onion and put it in my granite ware roaster that preheated in the oven to 450. I let that cook for 15 minutes, then added about a cup of flat CocaCola and three big sprigs of basil off my plant with about 3 TBSP on Balsamic vinegar and covered it and lowered the temp to 300.

I let that cook for about 30 minutes then added taters, baby carrots and some coarsely chopped celery.

It's baking now and I figure it will be ready in a couple hours.

I have never tried the 'cola roast' thing before, I'll let you know......

2. If anybody can do great things with a hunk 'o beef, you're the gal to get it done
Every time you talk about fixing your roasts I want to run down there with a piece of good bread and dunk it in the juices.

And we just finished supper a little bit ago. I mean, I even had a cup of coffee and a cruller for dessert! I bet your kitchen smelled like heaven.

4. it did! and the juice was sweeter than usual
but darned good

I asked Mr. K if he wanted gravy and he declined, but I'm thinking it was cuz he didn't want to wait LOL

His cholesterol came back in great shape so beef is what's for dinner around here. hehehe

3. What does the coca-cola do for it?
I've seen cola-roast recipes around for a while now, and I've always been curious as to what it is they do for the roast. I'm curious to hear what your thoughts are about it.

5. ahhh thanks! I missed you guys too....
with a chuck you need moist heat to make it tender, the cola just replaces the liquid I guess. it didn't caramelize or anything and was less sweet than I expected.

the basil was a great addition IMO though......

the acid in the cola helps tenderize and most recipes use a package of dried onion soup mix

6. Glad your experiment
turned out. I would have never thought of adding Coca Cola as a liquid, although I have added root beer while roasting ham.

This is definitely worth a try.
