Original message
I wanted to bake a pie for election night, to take over to friends' house
and watch the returns. It is, of course, going to be a SWEET POTATO PIE!! Never having made or eaten one before, I would appreciate input and maybe a tried and true family recipe.

Anybody here got one?

1. I'll give you a kick
I used to have a good recipe but lost it.

My problem with most recipes is they designate a number of potatoes, not the volume or weight. Sweet potatoes vary from small to huge. What does "6 sweet potatoes" mean?

2. I'm sorry I can't give you an exact recipe
I basically use a pumpkin pie recipe with a can of sweetened condensed milk, 3 eggs, cinnamon and nutmeg. I roast the sweet potatos, peel and cool in a colander overnight in the fridge to drain off any moisture. I use about a cup and 3/4 of mashed potato. I top with a strusal with candied pecans chopped in it.

4. If you want a bit of a richer pie
You can add an 8 oz package of softened cream cheese to it. It's not enough to make it cheese cakie but adds an extra dimension.

5. I bake the sweet potatoes first because it concentrates the flavor
Then scrape out the insides (getting rid of long fibers as you go) and measure out enough mashed pulp to make about 2 cups of sweet potatoes. From there, I follow a basic pumpkin pie recipe BUT I substitute half & half for milk and give it a nice shot of bourbon for a kick. Good eatin'. I'm doing one for election night, too. :toast:

6. I have made sweet potato pie before using a standard pumpkin
pie recipe (off the can of pumpkin) and just substituted mashed sweet potatoes for the pureed pumpkin. If you bake your own sweet potatoes and mash them, the pulp will be a little drier than canned pumpkin and you may need to add more milk to make it the right consistency. I know people who use the canned sweet potatoes in their pies and they contain enough moisture that the extra milk may not be necessary.

7. The Southern Living Cookbook's "Sweet Potato Pie" recipe for Nov 4th :)
I have this on another post. We are having this really easy, and really yummy Sweet Potato Pie on Nov. 4th to celebrate with champagne, and will put our flag out once it is announced that Obama is our next president ! The champagne we are having actually stated "flavors of pie crusts" ! We thought perfect with our pie !!! OBAMA !!!!!
Preheat oven to 400. (I buy all organic ingredients for below and use sea salt.)
2 cups cooked, mashed sweet potatoes
1 cup firmly packed brown sugar
1/2 cup butter, softened
2 eggs, separated
1/2 tsp ground ginger
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp salt
1/2 cup evaporated milk
1/4 cup sugar
1 unbaked 10-inch pastry shell
whipped topping ( i like to make from fresh cream)
Combine sweet potatoes, brown sugar, butter, egg yolks, spices, and salt in a large mixing bowl; beat until light and fluffy. Add evaporated milk; beat until blended.
Beat egg whites ( at room temperature ) until foamy; gradually add sugar, 1 tbsp. at a time, beating until stiff peaks form. Fold into potato mixture. Pour filling into pastry shell. Bake at 400 for 10 minutes; reduce heat to 350, and bake an additional 45-50 minutes or until set. Cool.
Top with whipped cream.
