Not the best pic, as usual, but OMG! I haven't had really good home-fried chicken in ages because we don't buy it anymore, not even at Whole Paycheck! It was the first attempt by one of our co-op producers to do pastured poultry in addition to his beef and pork. He exceeded, I mean succeeded beyond my wildest expectations. This bad boy was 5.10 lbs! What you see on this platter is minus the breast and thigh we already ate.

Marinated it all day today and then dredged in an egg/yogurt mixture and then in flour, kosher salt, granulated garlic, pepper, and cayenne. Then dredged it in both again before putting in the cast iron skillet. I only have one large cast iron skillet so I had to fry it in three batches.

The breast was tender and juicy. It alone was really enough for two meals but... I served it with baked sweet potatoes, sliced tomatoes, and dutch oven crusty wheat bread. I didn't even eat a potato and hubband only ate half of one.

That bird was over $21 but there are at least two more meals there and I made broth with the back and neck.


We may not have room for the green tomato pie and vanilla ice cream later.

2. I used
olive oil, lemon juice, red wine vinegar(just small amounts of each), salt, pepper, garlic. Turned the chicken to coat it really well a few times. But I might as well not have marinated it, really. This all natural way of raising chicken produces a bird with firm flesh, not spongy so it really didn't seem to absorb much of the marinade yet tasted wonderful all the way through.

How's your dinner coming? Smelling good in there yet?

3. Oh, it smells awesome in here. I decided to do it in the heavy pot,
like the original recipe, and it's about done. I just tried a little bite of the meat and...YUM!

The sauce is still kinda watery, so after I rest the meat, I'm going to reduce it some.

I'm serving it with buttered pasta with fresh grated Parm, and a Spinach salad. :D

4. Sounds like a plan!
If you want, you can also add a small can of tomato paste to thicken it up a little bit. Enjoy!

7. I'm stuffed
Painfully stuffed.

It was really good. Probably two more meals in the pot since I'm the only one who will eat it. Sparkly had some ratatouille she'd made on Friday. We shared the egg noddles as the base.
