Culinary Prep Food Marinating and Sanitizing System: Anyone know about this?
Anybody have knowledge or experience with this thing? I never heard of it before today.

It's a gadget that alternately vacuums and marinates food. They claim that it eliminates 99.5% of bacteria, tenderizes food, enhances flavor and texture, and even removes free radicals (!?). At $399.99, I kind of think it ought to butter the toast or wash the dishes or massage my feet or something.

1. Ah, I wouldn't rush out to buy one. And I question their numbers.

It probably removes SURFACE bacteria and e. Coli, but the problem with e. Coli is rarely surface bacteria - it gets burnt off anyway (in a cooked meat). That's why you can have your stakes bloody rare if you want them.

When surface e.Coli gets on cuts that are then ground up, it's all over the inside of the burger or sausage or whatever. I don't see how this will take care of that.

I personally wouldn't be rushing off an order.

It looks like a silly gadget to buy self indulgent fools with trophy kitchens whose idea of cooking is ordering takeout and plating it themselves instead of eating it out of the cartons.

5. How is this different than canning with a pressure cooker?
You put it in a marinate, heat it up to kill bacteria, vacuum seal it in jars - seems like the same basic deal as this.

(Although this probably doesn't blow up while my dad's in charge of it, sending blueberries in a glorious explosion of purple all over the kitchen ceiling when mom's not home.)
