Okay, I just pulled a single layer vanilla Genoise cake out of the freezer
What should I do with it? I'm looking for ideas. It's a 9" round layer.

1. Peaches and nectarines are just coming into season now....
Perhaps something incorporating the fresh fruit, and maybe a whipped cream-based frosting/topping?

Sliced bananas, sliced strawberries that have been sugared and drizzled with a little balsamic vinegar and chilled, lightly drizzled over with a dark chocolate ganache, chopped pecans, and dollops of a lightly sweetened creme fraiche.

I've never made this, mind you, but it sounded good off the top of my head. LOL :9

...and a pistachio pastry cream filling between split layers.

They pretty much are "plain food" kind of folks. I'll bet that would be delicious, though.

slice through it to get layers under 1/2 inch thick. This might be easier when it is still frozen.

Then coat the layers with ice cream and roll them up.

Fruit and whipped cream can be judiciously used, and squaring the rounds before rolling is not a bad idea, with the ends used for something like strawberry shortcake.

9. Cake and ice cream roll-ups
with fresh fruit and whipped cream... yum! That's a good idea. I have a big cake slicer tool that could slice the layer more evenly than I could.

10. If I had that here's what I would do
fresh strawberries sliced, sprinkled with sugar and let sit in the fridge overnight to extract the juices - then serve the cake with coconut ice cream and the strawberries

I've got the ice cream and strawberries, but if I had that cake, it would be joining the party with them
