Bourdain went back to work the saute station at Les Halles for a day, to see if he still has his chops. It was funny in that respect, but also a fascinating springboard for him to show in detail how a professional kitchen works. GREAT episode. And there was the added bonus of Eric Ripert showing up (unannounced in the previews!) to work the grill station with him that night.
Try to catch the re-run if you missed it!

Maybe Food TV ought to have a special where the chefs staff an actual kitchen and run the stations. Paula Deen on the fryolater. Bobby as dishwasher. That would be cool.
