appetizer recipe...any suggestions besides celery?

1. how about a dip using non-fat yogurt?
You can provide vegetable sticks; she can pick the ones that suit her diet. Trader Joe's makes a marvelous non-fat Greek yogurt, unflavored, that is deeelicious and low carb. I just had some myself, and I am a newly diagnosed Type 2 diabetic following an extremely low carb diet.

You could mix it with dill, some lemon, some fresh herbs, a bit of garlic.

And how about serving some cold shrimp with it? Or chopping them to put right in the dip, turning it into a spread?

You might be able to find some low carb crackers to serve with it. I haven't looked for crackers, so I don't know a brand.

(I mix the non-fat Greek yogurt with frozen peaches, whey protein, and a bit of non-sugar sweetener. It's like the most scrumptious cheesecake. Mmmmm.)

2. My daughter's shower was today
We did a vegetable tray, apple tray with a cream cheese dip, and meat and cheese tray. I used little round canadian bacons for the meat. Alpine makes good low fat cheese. Salmon spread with a low fat cream cheese would work. You could get a party package of rye bread. We had that and cupcakes. Stuffed mushrooms would work. Some kind of spinach snack. I've also read to use won ton wrappers instead of dough, and bake them in the oven. Never tried that. I made a spinach dip with half canelloni beans at Christmas, that was good. I'm rattling.

3. Morning-star Farms makes a non meat burger with Basil/mozzarella flavor
It's fantastic. You could cube them up and serve with some sliced cherry tomato on top as part of an appetizer assortment. Very low in Carbs and fat and amazingly delicious.

12. Those recipes are good for ALL of us
I love finding places that don't have typical boring low fat low carb recipes...a bit of gourmet goes a long way :)
