Yay! Chili!
Edited on Mon Jan-10-05 08:21 PM by Crisco
After something like 5 tries, finally found something I was happy with. Not too hot, not too .. I dunno. Something.

Used

1 & 1/2 pound hamburg (hey purists, I'm not using sirloin for experiments, ya know?)
2 poblano peppers - home roasted)
3 anaheims - ""
2 red bells - ""
1 onion, sweated
about a tablespoon of cumin
a little coriander
about 1/4 t chili powder
a little bit of water
two 10 oz cans of Ro-tel
one can of pinto beans.

Finally! Yummage.

4. All the supermarkets here in Nashville have it
Some keep it in the canned fruits / tomato section. In some stores, chili fixings get a section of their own.

6. You've got to be able to find it down in AZ
I find it here in colorado at King Soopers (Kroger) with all the other canned tomatoes. They've added a Mild version, too. I always use one can when making a pot of green chile. I like having some tomato in there for color and the jalapenos in it add some pop. I always make g/chile with mild chiles. The Rotel gives it a slight kick.

How were your beans? I kept thinking about that crockpot of yours yesterday and really sunk low. I opened a can of Van Camp's beans with ground beef and made a cornbread. Van Camp's came out with three new bean products - beans with chicken, franks or ground beef. I bought a can of each and they aren't half bad in a pinch. They didn't skimp on the meats at all. Well, at least my cornbread was from scratch!

7. they were great
I cooked rice for them last night with cornbread

tonight we used cornbread as a base for the beans (adds a nice sweet touch)

this was the first time I used the Xmas turkey stock I made and I was pleased :)

it was so funny tho, we were in the middle of cleaning out all the cupboards when the beans got done, I didn't have a spot on the counter to set the bowls down to dish up supper hehehhe

worth it tho.. the kitchen looks awesome

I swear that Feng Shui thread has sure made a difference in there

are you still going to make it thrifting tomorrow? I can't wait to hear about it :D

8. your kitchen sounds like a fun place to cook now
i drove passed the thrift today but didn't stop as i had a whole bunch of errands. i'm planning on going back tomorrow - yes! i'm going to look for some silver plated iced tea spoons. i like the old ones and use them for ice cream, yogurt and pudding. the old ones always have a nice feel to them. for a dime each, it's a good deal.

9. ro-tel..
..is usually where the canned tomatoes are in the supermarket.

There's a recipe that originated in Texas using Ro-tel that is the only reason I buy it -- King Ranch Chicken Casserole. Kind of a creamy layered enchilada dish. If you google for it, you'll find dozens of variations, but always Ro-tel.

11. It Was, Thank You
but man, I'm tired of the leftovers.

BTW, thanks to your sick wife, I made a great batch of chicken soup last week. I hope she's all better now.

13. You inspired me
I have a pot in the pressure cooker right now. I had a left over pork shoulder bone that I threw in with ground pork, rough ground beef and the other necessities. I think I may have made it too spicy tho-- I'm from the no measure dump and run school of chili cooking. I use ro-tel as well as a large can of chopped tomatoes.

No beans for me though----I'm serving mine over little Christmas tree Pasta.
