Any suggestions for Goat Cheese

Any suggestions for Goat Cheese
I have two little hunks of goat cheese cryo-vac'd in my fridge. I think I better use them soon. What should I do with them. SO and Child aren't fond of it so that leaves just me. It's really not my favorite either but I could possibly change my mind if it was in something---

What do you do with your goat cheese other than put it on a salad?

1. Appetizers and other ideas
1) Easy: Mix goat cheese with basil, garlic and red pepper (diced small), put in filo cups (pepperidge farm makes 'em) and warm. These are great.

2) Easier: slice french bread and lightly oil. Layer with slice of tomato, goat cheese and bake until warm. Top with basil and serve.

3) Less easy: Chicken stuffed with goat cheese, prosciutto and spinach. Flatten the chicken into thin filets and season with salt and pepper. Saute the spinach (no oil needed) until wilted. Spread spinach on the chicken, then the prosciutto, then the goat cheese. Roll and secure with toothpicks. Saute to brown then put in the oven to finish cooking. (Covered, I think.) You can add goat cheese to the remains in the saute pan to create a sauce. I got this recipe from either Cooks Ill. or Food and Wine so it may be on line somewhere. It's a bit involved the first time you make it but gets easier once you know the routine.

2. Place the cheese
into small and shallow oven safe dish and cover with a really good jarred marinara. Add more garlic, or cloves of roasted garlic and drizzle with a good e.v.o.o

Bake at 350 for 10 - 15 minutes and serve with toasted slices of baguette.

Or stuff roasted red or larger mild peppers with the cheese. Add garlic, e.v.o.o salt and pepper to taste.

Bake for 10-15 minutes until heated thru. I have used jarred roasted red peppers for this, and it makes an easy tasty appetizer.

I've done both with goat cheese and they turned out yumsome.

4. I stuff my chicken breasts with it
but I use a mixture of pears and mangos with the goat cheese under the skin of the chicken breast, with chopped basil leaves. It's actually very good.

7. Couple things:
1. Peel and slice beets into very thin slices.
Toss with olive oil, salt and pepper. Roast in a foil packet a 425-degree oven until the beets are done. This can take anywhere between 20 and 40 minutes, I've found, and there's often no rhyme or reason why.

Meanwhile, slice some french bread into sandwich-sized pieces. Spread the goat cheese on the bread, and top with the roasted beets and some salad greens tossed with a balsamic vinegrette.

2. Brush mushroom caps with olive oil and bake in a 350 oven until they're about half cooked -- maybe 10 minutes. You may need to drain a little water out of the mushroom caps.
Stuff partially cooked mushroom caps with goat cheese. Top with a slice of jarred roasted red peppers (the brine adds some acidity and salt). Return to the oven and bake until the mushrooms are done and the cheese is melted -- another 10-15 minutes.
