Okay, harvest season begins. I just blanched and froze 2 gallons
of green beans from my garden, and froze 1.5 gallons of raspberries. Oh, yeah. Will have some peas in a couple of days, too.

1. today I'm doing pickled onions
because I found some two-pound bags of beautiful baby onions. They'll be a nice garnish. Four pounds of onion, comin' up. And I'll be freezing three pounds of beautiful blueberries. Then off to the farmer's market tomorrow for raspberries.

2. Raspberries don't last long
enough to be frozen around me. 1.5 gal of them would last me about 2 days. I'll eat them fresh, with a little cream, on cake, or raspberry cobbler.

3. Cucumber, zucchini, and I'm makin' pickles in my sleep.
Don't know how many batches of pickles, relish, jams and jellies I've made. Our strawberries were super this year, and I still have some in the freezer to make jam with when I get more time. We had great blackberries, too, and I made jelly with those. Now the corn is coming in and I've already put a couple of batches in the freezer. Tomatoes up next. Though it's tiring, I love canning and preserving, and those jars lined up on the shelf and a well-stocked freezer are so rewarding.
