What are paletas?
I read an article in todays Charlotte Observer about a Mexican popsicle called a paletas. There is a paletas shop in Durham, but that is several hours away from where I live, so I was wondering if they are easy to make at home. The Durham paletas shop has combos like pomegranate/tangerine, coconut/lime, blueberry/sage, etc. They don't ship, so the ingredients must be very fresh and delicate.

Paletas are really cool frozen treats
Loco Pops shop in Durham has developed a cult-like following

Paletas are Mexican frozen pops. But they compare to Popsicles the way a fine Bordeaux compares to Boone's Farm.

Paletas are made with fresh ingredients in a stunning variety of flavors. Cucumber-chile, for instance, is pale green with flecks of red and a taste that's barely sweet with a touch of heat.

2. That sounds simple enough.
Quick trip to the farmers market this weekend, and I will give it a go. Sounds like similar recipes would make excellent sorbet, too.
