Chinese/Italian/Carribbean fusion, I guess. Another "oh, crap, what's in the pantry?" evening. I was going to do the salmon separately, but then discovered I didn't have enough in the freezer for two servings.
I heated up some oil in the wok, and then fried a small amount of cinnamon and red pepper flakes. Added some finely chopped red onion and garlic, and wilted that a bit. Added a cubed cooked sweet potato, fried that. Added about 4-5 ounces of salmon that had been chopped and marinated in OJ, lime juice, salt, pepper, honey and olive oil. Pushed the mess to the side, added about 4 cups of cooked brown rice, fried that for a few minutes, mixed it together, added a cup or so of OJ, a cup of chicken broth, S&P, and let it cook down.
My SO took thirds!
