It's what's for dinner tonight.

Brown the beef shortribs with onions, garlic, and capers, add a couple of tbsp of paprika for just a few stirs in the hot oil to coat everything, then deglaze the skillet with chicken stock while loading the shortribs and other solids into a crockpot with some juniper berries, bay leaves, and some Montreal Steak Seasoning in place of simple salt and pepper. Add the deglazing liquid and enough additional stock to almost cover the ribs, cook all day. After pulling the shortribs out, reduce the sauce on the stovetop over high heat until it's a medium thick gravy. Serve over couscous with the gravy, butter beans cooked in stock on the side.
